How It All Started in 2010

Winning the Food Network Great Food Truck Race, Twice
In 2011, we entered the Food Network's Great Food Truck Race. For anyone who doesn't know the show, it pits the country's best food trucks against each other in a multi week cross country competition. Operations, business savvy, food quality, and crowd appeal all get tested under serious pressure.
We won.
That should have been the peak of our story. It wasn't.

Why We Cook Seed Oil Free
A few years ago, we made a decision that very few food trucks have made. We pulled every seed oil out of our kitchen.
No canola. No soybean. No corn oil. No generic vegetable oil. We partnered with Zero Acre Farms to cook every dish in cultured oil, made through fermentation rather than industrial farming.
Why? Three reasons:
- Better flavor. Cleaner cooking oil means crispier tortillas, brighter flavors, and food that sits lighter.
- Better for guests. Many of our clients and event guests prefer to avoid seed oils. We listened.
- Better for the planet. Cultured oil uses less land and water than industrial seed crops, which fits our values around responsible sourcing.
