    A simple served format is priced differently than a full build-your-own taco bar with a wide topping spread. Build-your-own requires more product, more setup, and more staff to keep stations stocked.

    4. Service duration

    A two-hour backyard party is different from an all-day event with staggered service windows. Longer service means more staff hours and more food held at quality.

    5. Travel and location

    Events near our Irvine, Glendale, or San Diego locations involve less travel than remote venues out in the Inland Empire or the desert. Travel is factored in transparently and shown in your quote, never buried.

    What Costs Extra?

    Late night service. If your party runs long and you want us back at 10 or 11 PM with fresh tacos, that is a separate service window with its own cost. It is one of our most requested add-ons and worth it for events that genuinely run late.

    Multiple trucks. For very large parties, a second truck eliminates the line. That is an additional cost, and we will tell you honestly when your guest count actually needs it versus when one truck is fine.

    Extended service windows. Service significantly longer than a standard window adds staff hours.

    Mid-size parties are the sweet spot for value. Fixed costs are spread across enough guests that the per-guest number drops noticeably, and one truck still handles the crowd comfortably.

    Large parties can require additional service points or a second truck to keep lines short, which introduces a step up in cost rather than a smooth curve.

    If you are near one of those thresholds, tell us. Sometimes adjusting the guest count or service window slightly lands you in a much better position, and we would rather point that out than quietly quote the higher number.

    Why Won't You Just Publish a Price?

    Fair question, and it deserves a real answer rather than a dodge.

    Any flat per-guest number we published would be wrong for most events. It would overcharge the couple doing a simple taco setup for 40 guests in Irvine and undercharge the host doing a full spread for 200 in the desert with late night service. A single number only works if every event is the same, and private parties are not.
