Late-Night Food Truck for Your Wedding: How It Works

Somewhere around the third hour of dancing, your guests are going to get hungry again. Dinner was a while ago. The bar has been open all night. That's when a food truck pulling up with hot tacos turns into the part of the night people talk about on the drive home.
Late-night service is one of the most requested add-ons at our weddings. Here's how it works, from timing to menu to what your venue needs, so you can decide if it fits your reception.
What late-night food truck service is
It's simple. Around 10 or 11 PM, after the dance floor has been going for a while, The Lime Truck rolls up (or opens the window again) and starts cooking fresh tacos and sides for your guests. Everything is cooked to order, right there, so it's hot when it hits the plate.
You can book it two ways:
- With your reception catering. We handle dinner, then come back to the window later in the night for a second round.
- On its own. Your dinner is catered by someone else, and we come in just for the late-night window.
The second option is a separate, smaller booking. If your date is already taken for full reception catering, late-night service is sometimes still possible, so it's worth asking.
Why couples add it
The honest answer is that people are hungry. A long reception with an open bar burns through dinner fast, and a plate of hot tacos at 10:30 hits different than a cold dessert table.
It also gives the night a second wind. The music keeps going, guests drift out to the truck, grab a plate and come right back to the dance floor. And for guests who were too busy talking to eat much at dinner, it's a second chance.
Timing: when to schedule the late-night window
Most couples schedule late-night service around 10 or 11 PM. A few things to think about when you pick the time:
- Your venue's end time. Count back from when the music stops. You want guests eating while the party is still on, not on their way to the shuttle.
- When dinner ends. Give it at least a couple of hours after dinner service so people are actually hungry.
- The rest of the timeline. Cake cutting, the last dance and the send-off all need a spot. Late-night food usually lands after the cake and before the last hour of dancing.
Most of our packages include a two-hour service window, and you can add more time when you book. For a late-night slot, tell us exactly when you want the window to open and we'll plan the arrival and setup around it.

What to serve late at night
Late-night food should be easy to eat standing up, with one hand, while still talking. Tacos are perfect for that.
Our wedding menu includes the Taste Le Truck package, our most popular, with picks like:
- Tacos: Rojo Chicken, Seared Ahi Tuna and Mr. Potato
- Mains: SoCal Steak Quesadilla
- Sides: Mexican Street Corn, Legendary Brussels, Zesty Guacamole and House Chips & Pico
- Something sweet: Drinks or Churros
With that package, each guest can get up to two mains and two sides per visit. For a late-night round, a lot of couples keep it to tacos and a couple of sides so the line moves and nobody's waiting on the dance floor.
If you'd rather go lighter, the appetizer menu has bite-size options like Trippy Mushroom Cups, Ahi Poke Cups and Mini SoCal Quesadillas.
Dietary needs
The late-night crowd is the same crowd you fed at dinner, so plan for the same guests. Our wedding menus include vegan, vegetarian, gluten-free, dairy-free and soy-free options. Tell us what your guest list needs when you request a quote, and we'll build the late-night menu around it.
We also cook with zero seed oils on all our trucks, through our partnership with Zero Acre Farms.
What your venue needs
This is the part that makes or breaks a late-night truck, so check it early with your venue coordinator.
- Space. A flat, level area about 30 feet long by 12 feet wide, with about 14 feet of overhead clearance. Watch for tree branches, string lights and covered entries.
- Power. A standard outlet nearby, or room for us to run a quiet generator.
- Access. A clear path for the truck to pull in, and a spot close enough that guests don't have to hike to get food.
- Late-night rules. Some venues have noise or vehicle cutoffs at night. Ask your venue when outside vendors can arrive and when they need to be gone.
Lighting is worth a mention too. If the truck parks somewhere dim, guests will need to see the line and the path back to the party.
How big a crowd can a truck handle?
We cater weddings from about 30 guests to more than 500. For larger guest lists, we can bring more than one truck so the line doesn't stall the party.
Late-night turnout is hard to predict. Some guests will have left, and some will come back for seconds. Give us your full guest count and how long you want service to run, and we'll plan the setup around it.
What it costs
Every wedding is quoted on its own. The total depends on guest count, menu, service window, venue location and whether you add late-night service to reception catering. Send us your details and we'll put together a custom quote.

FAQ
Can you just do late-night if someone else caters dinner?
Often, yes. Late-night service is a separate, smaller booking, and we can sometimes fit it even when we aren't available for full reception catering.
How many guests can you serve?
From about 30 to 500 or more. For bigger weddings, we can bring multiple trucks.
Can you accommodate dietary restrictions?
Yes. Our menu includes vegan, vegetarian, gluten-free, dairy-free and soy-free options.
Do you set up at the venue?
Yes. We bring the truck to your venue and handle all setup and breakdown. We just need a flat, accessible space for the truck and access to the event area.
